Sweet and Sour Chicken
- 1 pound boneless chicken breast, cut into bite-sized pieces
- 1 cup bell peppers, chopped
- 1 cup pineapple chunks
- 1/2 cup onion, chopped
- 1/2 cup sugar
- 1/2 cup vinegar
- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Cooked rice for serving
- In a bowl, mix sugar, vinegar, soy sauce, and cornstarch. Set aside.
- In a large skillet, heat vegetable oil over medium heat.
- Add chicken pieces and cook until browned and cooked through.
- Add onion and bell peppers, and stir-fry for 3-4 minutes.
- Add pineapple chunks and the sauce mixture. Stir well to combine.
- Cook until the sauce thickens and coats the chicken and vegetables.
- Season with salt and pepper to taste.
- Serve over cooked rice.
